We have a small door that will be underneath our stairs leading to a hot water heater. There is some extra room beyond that I won't be able to access because the WH will be in the way and I was trying to think of ways that I could use the space. Under our staircase is another staircase that leads to garage. Raised house in the South. Those are all great ideas;)
You should look into a tankless water heater. It would free up some space.

Those are all amazing ideas, love the pull out storage drawers. On a different note...I saw a picture of a cute reading nook underneath stairs. Either way, it is a good use of space.
